These tips will ensure optimal results when baking in your Gaggenau convection oven. Our website’s recipes are specifically designed for baking in our ovens and do not require adjusting the temperature. If you’re using a recipe not tailored for Gaggenau ovens, lower the temperature and follow timing tips below.

Convection Mode

In this mode the oven air is heated by the convection elements on the rear wall of the oven and circulated by the fan. This circulating heated air cooks food from the edge to the center. For best results, reduce the recipe temperature by 25 degrees. A dark ring around the edge of the food indicates the recipe temperature was too high.

Top Heat

This mode can be used to direct heat to the top of a baked item such as a fruit topped cake to gently finish the baking or gently browning the topping of a fruit crisp or coconut topped dessert.

Bottom Heat

Towards the end of baking if the tester does not come out clean, use this mode to gently finish the baking to dry out the batter without overbrowning the baked item.

Top + Bottom Heat, Traditional Baking Mode

Use this mode for traditional single rack baking with no temperature adjustment.
