Ingredients for Beet Tartar Marinade 750g yield

325g soy
50g sesame oil
125g honey
85g sesame
40g scallion
40g minced garlic
Ingredients for Egg Yolk Jam 470g yield
30 eggs cooked@ 64c 2 hour
Only egg yolk 470g
Blistered Marinated Red Peppers
Long red chilli pepper 200g sliced
Mirin 12g mix together
Garlic 12gr mix together
Sesame oil 9g mix together
Soy 13g mix together
Honey 22g
Korean Chilli Flakes 7g
9g sugar

¼ cup water
6g canola oil
Garlic 12g

Directions:

Slice long red peppers on a base. Mix all the ingredients together mirin, garlic, sesame oil, honey and chilli flakes. Use 6g of canola oil until smoking and add the blistered red pepper and 12g garlic, and then add in the mixed ingredients. Add water at the end and bring to a boil and cool down.
